Description:
A meaty tasting lasagne that is vegetarian (or use hamburger). Don't let that scare you off, it's very meaty tasting. It's also delecious, easy to make, makes a great leftover and is inexpensive !
Ingredients:
Feeds 6 adults and provides leftovers
1]Lasagne noodles 1 package
2]Tomato sauce 2 large cans
3]Spinach 1 package
4]Cottage Cheese 1 tub
5]Cheedar/Mozzarella cheese (handful needed)
6]Italian spices, garlic.
7]TVP or hamburger 1 cup (TVP=textured vegeteble protein - found in bulk food section of grocery store, very inexpensive, tastes like hamburger, substitute hamburger if this turns you off)
Directions:
-Start lasagne noodles cooking, get the water boiling.
-Prepare the spinach, remove any stems if there. I will microwave it in a covered bowl with water for 2 minutes. Drain when done.
-Prepare TVP (just add water in 1:1 ratio, 1/2 cup makes enough for 1 layer below)or cook 1-1.5 cups hamburger.
-Mix tomato sauce and spices (I use a generic 'Italian Spices' mix and garlic)

Use baking dish of appropriate size. Turn oven on to 350F. Now add ingredients in layers:
-Add a thin layer of tomato sauce to the bottom so the lasagne will not stick to it.
-Add a layer of lasagne noodles and a little tomato sauce on top
-Add layer of TVP or Hamburger and a little tomato sauce on top
-Add another layer of lasagne noodle and a little tomato sauce on top
-Add layer of Cottage cheese and a little tomato sauce on top
-Add another layer of lasagne noodle and a little tomato sauce on top
-Add layer of spinach and a little tomato sauce on top
-Add another layer of lasagne noodles and a little tomato sauce on top. Then cover it with cheddar/mozerella cheese.

Bake for 40minutes at 350F, or until cheese on top starts to turn a little brown.
Garlic toast makes a great side dish.
Makes a great leftover and adults love it too !
